I am a genuine oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you ever tried any of them yet? (? You can locate all my oatmeal cookie recipes right there!) They're a few of the most well-known recipes in my website because they taste very sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!
So you'll start with whole wheat bread (or gluten free, if you would like ) and prompt oats (like these... or these for a gluten free edition!) . Instant oats are smaller and thinner than conventional rolled oats, also you may see them at canisters right alongside those old-fashioned oats at the grocery shop.
I probably seem like a broken record by now... But cause I ? you and want your cookies to flip out absolutely plump and soft, I am reminding you again... Quantify your yogurt and bread correctly, with this technique or a kitchen scale! (? That is the one I have and enjoy. It only cost $20!) Too much of either ingredient will make your cookies taste cakey or sterile, instead of chewy. This is especially true of this oats--that they behave like little sponges and consume plenty of moisture out of your cookie dough!
Ripe bananas- ideal for baking! Really like all @amybakeshealthy's yummy & healthier banana recipes!
Watch those bananas? And all of those brown spots? When it comes to baking bananas, brown = amazing! I ? extra speckly bananas cause they've a lot bright, bold taste --and additional natural sweetness! That is the minimum number of brown which I suggest. More is better!
The remainder of the cookie dough's sweetness comes from a different natural ingredient... Pure maple syrup (like that!) . You desire the type that comes directly from maple trees, which is normally sold in sparse glass jars or squat, round plastic jugs. Forget the pancake syrup and sugar-free syrup!

The peppers include much more sweetness! The recently purchased, additional plump, perfectly tender ones are ideal... But if you have old, slightly dried out raisins (hmm... it seems absurd to explain dried fruit as dried outside! ) , that's fine!
Simply add them into a microwave-safe bowland put water on top till they're completely coated. Seal plastic wrap across the top, and microwave the bowl on high for 1 minute. If you let the peppers sit mixing together the cookie dough, then this small trick hydrates them they're tremendously juicy--and that makes a major difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The recognizable comfy spices and plump blueberries make them even more irresistible. They'll keep for a minumum of one week if stored in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (fermented if required and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tbsp (28g) unsalted butter or olive oil, melted and cooled slightly
1 teaspoon vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops on the sheet, and apply to the desired depth and width using 20 Homemade Vegan Cookies That Will Make Your Kitchen Smell ... a spatula. Bake at 325°F for 10-12 minutes.
Notes: It's extremely important to quantify both the oats and flour correctly employing this technique or a kitchen scale. (? That's exactly the one I own and adore!) Too much of either could dry out of the biscuits and leave them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They come in large canisters, just like old-fashioned oats. They're not those at the tiny flavored loaf of bread. To make your own, add the same number of conservative oats to your food processor, and pulse 10-12 days or until the oats will be about 1/4 to ? of their original size.
For the gluten-free flour, I recommend the following mix: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tablespoons (15g) brown rice , and 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if quantified like this.
In case your pancakes are older, drier, and not so plump or succulent... Add them into a microwave-safe bowland put water at the top till they're totally covered. Seal plastic wrap over the top, and microwave the bowl on high for 1 minute. If you let the raisins sit while mixing together the cookie dough, this little trick hydrates them they're really tender and succulent!
